Refreshing Mint Lemonade

by Diane Hopkins on July 19, 2009

Hot day? Refresh yourself with this super-easy, nutritious cooler!

Mint Lemonade

Fill blender with 2 cups cold water

Add:
1 whole lemon, washed and cut in half  (yes, with the peels on)
4-5 sprigs mint, stem and leaves

Blend thoroughly, and pour through a strainer.

Return juice to blender and add water and ice to fill the blender. Blend on high until ice is fully crushed.

Add a tiny amount of  stevia to desired sweetness (start with 8-10 drops of liquid stevia and add more to desired taste or 1/16 tsp. of white powdered stevia).

Enjoy this healthy, cool and flavorful drink! It looks sort of neon and tastes much like the Crystal Light brand drink, only it is good for you!

Here in Mexico we make another refreshing drink:
Blend 1 large cucumber in the blender and mix in a gallon container with the juice of 10 limes and 1 cup of sugar (or your preferred sweetener) and fill with water. Serve chilled or over ice. Aaahhh!

Just pop the entire lemon right in there. Wash it first. Don't worry about seeds or anything, as you strain it before you drink it. The zest (lemon peel) adds a yummy flavor too. Enjoy!

Hi Dianne,

This may be a silly question but do you juice the lemon before adding it or add the entire lemon? This looks really interesting and I wanted to try it. I am loving stevia too!
