I Don’t Envy Anybody

by Diane Hopkins on October 6, 2011

Ha!  Just have to share my smile this morning!

Last night my daughter Louisa and I made the most scrumptious sugar-free chocolate ice cream as we listened to “Devil Went Down to Georgia”, an energetic fiddlin’ song.  As we sat down to relish it, spoons-in-hand, she exclaimed with all the passion of a 15 year old:

“I don’t envy anybody!

I’ve got everything in the world I want!

I’ve got ice cream and bluegrass!”

Does it make you smile too?

Glad you enjoy!

The chocolate ice cream recipe is the same one I've been using all along—just add about 1/4 cup cocoa powder (unsweetened) and some walnuts at the beginning of churning. I add xylitol, stevia until it tastes sweet enough. Yum!

The chocolate chunks are a new sugar-free Belgian chocolate that I am stocking now for Christmas delight! So, so yummy! If you get my emails (sign up at http://www.lovetolearn.net/signup.lasso), I'll be sending out an email on Sugar-free Belgian Chocolate for Christmas . . . coming soon. I just discovered it, and it is super delicious! It is making being sugar free so so much easier!

It's so nice that Louisa finds contentment in simple things! That's rare among youth, even some homeschooled ones,

I'm dying to know how you made chunks of chocolate in that ice cream — didn't you use chocolate stevia powder?

Awesome! I hope my daughters grow up to be like Louisa.
