Southwest BBQ Chicken Salad

A complete meal!

 

Southwest BBQ Chicken Salad

I like a lot of veggies in my salad, but use whatever you have on hand, and it will still taste great! The magic flavor is the salad dressing and olives, I think!

1 head green or red leaf lettuce, broken into bite-sized pieces

2 cups baby spinach leaves

2 cups spring greens

1 can sweet corn, drained

1 can sliced olives, drained

1 red bell pepper, chopped

4 green onions, sliced thinly

1 carrots, grated

1 cucumber, cubed or 2 baby cucumbers sliced

2 tomatoes, chopped

1 cup black beans, rinsed well and drained

3 hardboiled eggs, diced

1 cup grated cheese

2 chicken breasts, broiled and chopped into bite-sized pieces

 

Dressing and tortilla chip topping

Salad Dressing:

2 cups ranch salad dressing

1/2 cup spicy BBQ sauce

 

Wash greens and fill salad bowl.  Add rest of ingredients and toss with salad dressing, as much as you desire.  Top with broken tortilla chips. Serves 6.

Yum!

Hi… i love reading your blog recipes and homeschooling helps. I built and planted 6 square foot gardens last spring. I did not start any plants from seed. This year I plan to buy and start some heirloom seeds. Do you have any suggestions on how to start from seed? Are there some plants you recommend I just wait and buy the plant from the local greenhouse?

It's really important that you get seeds that grow well in your climate and locale. Call your local Extension Service and ask for a list of recommended varieties for your area. You can start the seeds indoors to get a head start. In the book, Square Foot Gardening, he gives easy-to-follow details on when to start each seeds, whether indoors or directly in the garden. It's really a very valuable resource. My book is half worn-out from hauling it out to the garden!
